I was lucky enough to attend an Elegant Desserts and Pudding course at Betty's cookery school and I had a brilliant time. I love to cook and have been on cookery courses in the past, but this outstripped all of the others. Everyone on the course had their own fully equiped and spotlessly clean kitchen to work in throughout the day - which made it feel a bit like the Great British Bake Off, but without all the judging.

Our tutors Chris and Amy were incredibly friendly and everso encouraging. They demonstrated every step of each recipe clearly and answered all of our questions. Each of our three recipes were broken down into simple stages. Chris and Amy would show us what to do a stage at a time and then we'd go away and try to do the same. There were 12 students on the course which meant there was plenty of one-on-one time and lots of help if your pudding needed rescuing. All of the ingredients were provided and had been weighed out for us in advance, which made it really easy to get on and concentrate on learning new skills and techniques.

There were plenty of breaks throughout the day, which started with Betty's crossiants and included a lovely lunch and plenty of Betty's biscuits and cake. I met lots of like minded people and there was lots of time to chat as we cooked.

By the end of the day I came away with three really impressive puddings - a Chocolate Charlotte with Espresso Bavarois, a Hazelnut Meringue Cake with a Raspberry Whipped Cream Filling and Raspberry Coulis and a Baked Cinnamon Ricotta Cheesecake with Caramelised Rosemary Figs. Betty's gave us sturdy boxes to carry our creations home with us, though you might like to bring a large tuppaware or two for extra security. It might also be a good idea to take a pair of marigolds because you have to do your own washing up.

It's a fairly long day so if you get tired easily you might want to try a half day course first. And don't forget to invite your friends over the next day to help you eat all your lovely cakes.
