- Gently simmer all the ingredients together for 10 minutes, taking care to prevent the cider from boiling, as this will reduce the alcohol content.
- Strain the spiced cider into heatproof glasses, add a cinnamon stick and sip while still hot.

1 litre /1¾ pints still dry cider Thumb sized piece ginger root, peeled and sliced 8 cloves 2 star anise 6 cardamom pods, slit 1 cinnamon stick, plus 4 to serve 4 thick strips of orange peel (peeled with a vegetable peeler) Honey to taste
