Warming spiced cider


  1. Gently simmer all the ingredients together for 10 minutes, taking care to prevent the cider from boiling, as this will reduce the alcohol content.
  2. Strain the spiced cider into heatproof glasses, add a cinnamon stick and sip while still hot.

For a non-alcoholic version substitute cider with unsweetened apple juice


1 litre /1¾ pints still dry cider
Thumb sized piece ginger root, peeled and sliced
8 cloves
2 star anise
6 cardamom pods, slit
1 cinnamon stick, plus 4 to serve
4 thick strips of orange peel (peeled with a vegetable peeler)
Honey to taste
