Vegetarian Christmas

If you have a veggie round for Christmas dinner this year, fear not. These delicious Quorn vegetarian alternatives to the traditional Turkey and pigs in blankets will mean they won't just be left eating a bowl of veg. 

Quorn pigs in blankets 

Ingredients

  • 1 pack Quorn Cocktail Sausages
  • ½ Pack Quorn Vegetarian Bacon, each rasher cut into four lengthways, to make 4 thin strips per rasher
  • 2 tbsp sweet chilli sauce

Method

  1. Preheat the oven to 180°C / 355°F / Gas Mark 4
  2. Brush each strip of bacon with a layer of sweet chilli sauce
  3. Wind a bacon strip around a Quorn Cocktail Sausage to create a spiral effect, with the sweet chilli pressing against the sausage. Use a cocktail stick to hold the bacon in place if needed
  4. Place the pigs in blankets seam down on a lined baking tray and brush with sweet chilli sauce
  5. Bake in the oven for 15 minutes, skewer with a cocktail stick and serve hot

Nutrition: 40 calories per serving

Tip

For a festive dip, pour 3 tbsp red wine and 3 tbsp cranberry sauce into a saucepan. Allow to bubble for 3 minutes to reduce slightly. Serve hot or cold with the pigs in sweet chilli blankets

 

 Quorn and chestnut loaf

Ingredients

  • 300g Quorn Pieces
  • 2 tbsp oil
  • 1 large onion, finely diced
  • 3 garlic cloves, finely diced
  • 1 ½ tsp dried sage
  • 200g mixed mushrooms, cleaned and diced
  • 1 vegetable stock cube, dissolved in 50ml hot water
  • 100g wholemeal breadcrumbs
  • 1 egg, beaten
  • 60g cranberries
  • 80g pre-prepared ambient packed chestnuts, diced
  • Season with cracked black pepper

Method

  1. Preheat the oven to 190C/ 380F/ Gas Mark 5. Line a 2lb loaf tin with greased proof paper
  2. Heat the oil in a large frying pan over a medium heat and cook the onions for 4 minutes. Add the Quorn Pieces, garlic and sage then continue to cook for a further 3 minutes, then add the mushrooms and stock and simmer for 5 minutes. Remove from the heat and allow to cook for a few minutes
  3. Place half of the mixture into a blender and pulse for 1 minute. Add back into the pan along with the breadcrumbs, egg, cranberries and chestnuts and mix well. Season to taste
  4. Place the mixture into the lined loaf tin pressing firmly down. Cover with greaseproof paper and bake for 30 minutes, remove the top layer of paper and bake for a further 20 minutes
  5. Remove from the oven and allow to rest for 10 minutes before serving
