- Using a pestle and mortar, grind the mint and sugar until you have a green coloured sugar mixture.
- Pour the Alpro Strawberry with Rhubarb into a large bowl. Crumble the meringue nests into small chunks. Add to the bowl along with the strawberries.
- Gently fold the yogurt mixture over the strawberries and meringue and spoon into 4 bowls or glasses.
- Sprinkle the top with the mint sugar and serve.
