Rhubarb and strawberry Eton mess


  1. Using a pestle and mortar, grind the mint and sugar until you have a green coloured sugar mixture.
  2. Pour the Alpro Strawberry with Rhubarb into a large bowl. Crumble the meringue nests into small chunks. Add to the bowl along with the strawberries.
  3. Gently fold the yogurt mixture over the strawberries and meringue and spoon into 4 bowls or glasses.
  4. Sprinkle the top with the mint sugar and serve.
