- Heat the olive oil in a large frying or sauté pan and brown the chicken breasts over a high heat on both sides. Remove the chicken and set aside.
- Add the garlic, lemon zest and juice and cream cheese to the pan and cook until well mixed together.
- Put the chicken breasts back into the pan and simmer over a gentle heat, turning regularly, for between 15 to 20 minutes or until the chicken is cooked.
- Serve the chicken and the sauce immediately with seasonal vegetables and a baked potato, or salad.
