Mint Ice Lollies


  1.  Place the water, chopped mint and sugar in a pan and bring to the boil, stirring until the sugar dissolves. Reduce the heat, simmer for 3 mins then stir in the lemon juice.
  2. Place a sieve over a bowl and pour the mixture through. Discard the mint leaves. Leave the juice to cool.
  3. Pour into lolly moulds, freeze for 30-45 mins, push in the lolly sticks and freeze until solid.

A drop of green food colouring
