Mediterranean salmon


1. Preheat the oven to 190°C/375°F/Gas Mark 5

2. Place the salmon onto a baking tray or roasting tin

3. Put the bread into a food processor to make breadcrumbs

4. Add the olives, tomatoes, cheese and olive oil and pulse to chop everything up roughly

5. Remove and press onto the salmon to form a topping

6. Cook in the oven for 20 mins until the fish is cooked through and the topping golden and crisp.

Serve with buttered new potatoes and steamed green vegetables


2 skinless, boneless salmon fillets, approx. 175g (6oz) each
1 large slice bread (wholemeal or white)
25g (1oz) olives (stones removed)
25g (1oz) sundried tomatoes
50g (2oz) Cheddar cheese
1 tbsp olive oil
