Italian cod with parma ham


  1. Preheat the oven to 200c/400f/gas 6
  2. Cut the tomatoes into quarters
  3. Peel and finely chop the garlic
  4. Put the cherry tomatoes, garlic, white wine, parsley, lemon juice and chilli into a small saucepan – bring to the boil – put on the lid and simmer gently for 5 mins
  5. Meanwhile – cut the cod steaks or fold them to make two neat parcels – wrap the Parma ham around them
  6. Put the tomato sauce into a small roasting dish
  7. Put the cod parcels on top
  8. Roast in the oven for 20 mins


Serve with a side of potatoes for a perfect dish for two!


2 fresh cod fillets (1 pack of 250g)
135g cherry tomatoes
150ml white wine
1 clove garlic
1 pinch of Chilli flakes
1 tsp dried parsley
10ml lemon juice
2 slices Specially Selected Parma ham
