Gastro cod fillets with sweet potato fries

Ingredients

  • 2 breaded cod fillets

Minted mushy peas:

  • 200g (7oz) garden peas
  • 20g (¾ oz) butter
  • Handful off chopped fresh ,int
  • 1 tbsp white wine vinegar

Speedy sweet potato fries:

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • ½ tsp smoked paprika
  • Sea salt & freshly ground black pepper
     

Method

  1. Cook the cod fillets as per the on pack instructions
  2. Boil the garden peas for two minutes
  3. Add the butter, finely chopped mint and white wine vinegar
  4. Blend until broken down but still retaining some texture
  5. Peel the sweet potatoes and cut them into French fries
  6. Heat the olive oil in a frying pan, add sweet potatoes and saute for 6-7 minutes turning regularly
  7. When golden, remove from pan and place on kitchen roll, pat off excess oil with another piece of kitchen roll
  8. Season with salt, pepper & smoked paprika
