Curried parsnip soup


  1. Heat the butter in a saucepan, add onion and cook until softened.
  2. Add the parsnips, vegetable stock, milk and curry flavour pot, bring to the boil, cover and simmer for 15-20 minutes or until parsnips are soft.
  3. Pour into a food processor or blender and blitz until smooth.
  4. Serve garnished with chopped chives and a swirl of cream

25g butter
1 small onion, chopped
250g parsnips, diced
600ml vegetable stock
200ml semi skimmed milk
1 Knorr Curry Flavour Pot
Fresh chopped chives
3 dessert spoons single cream (optional)
