- Heat the butter in a saucepan, add onion and cook until softened.
- Add the parsnips, vegetable stock, milk and curry flavour pot, bring to the boil, cover and simmer for 15-20 minutes or until parsnips are soft.
- Pour into a food processor or blender and blitz until smooth.
- Serve garnished with chopped chives and a swirl of cream
