- Add the flour, salt, eggs, vanilla extract, sugar, yogurt and milk into a large mixing bowl and use a whisk to beat the mixture together for a few seconds until smooth. Stir in the grated carrot and sultanas.
- Heat a few drops of vegetable oil in a large frying pan and add large spoonfuls of the batter, cooking over a medium-low heat for 1-2 minutes until bubbles appear on the surface. Flip over to cook the other sides for a further 1-2 minutes. Cook in batches until all the batter is usedup.
- Serve the pancakes, spread with the cream cheese and drizzle with a little clear honey.
