- Snip each pitted prune in half, place in a small bowl and cover with Armagnac. Leave to soak for at least 1 hour or longer if time allows.
- Divide the soaked prunes between two ramekins and pour over any remaining juice
- Crumble an Amaretti biscuit over each pot of prunes then spoon half the quark into each ramekin
- Sprinkle a teaspoon of Demerara sugar onto the top of each pot then bru?le?e under the grill for 2-3 mins or with a blowtorch, then serve
