Brussels sprout salad


  1. Heat the oil in a frying pan and fry the sprouts and walnuts for 1-2 minutes.
  2. Remove from the heat and toss in the apples.
  3. Whisk the lemon juice with the cranberry sauce and oil and toss into the salad with the sprout mixture.

1 tbsp olive oil
500g cooked Brussels sprouts, sliced
50g walnut pieces
1 red eating apple, cored and sliced
Juice 1 lemon
2 tbsp cranberry sauce
1 tbsp extra virgin olive oil
4 handfuls Watercress, Spinach & Rocket Salad
