Baked peppers


1. Preheat the oven to 200°C/400°F/Gas Mark 6

2. Place the halved peppers in a baking tin

3. Place 1 tsp of pesto into each half and spread out a little

4. Divide the tomatoes and feta between the peppers, drizzle with the oil

5. Bake in the oven for 25-30 mins until the peppers are cooked through and the cheese is golden at the edges

4 peppers, halved and seeds removed
8 tsp pesto
225g (7oz) baby plum tomatoes, halved
200g (7oz) Feta cheese, cubed
2 tbsp olive oil
