- Bring a saucepan of water to the boil and add the rice. Stir, then bring back to the boil. Gently simmer according to pack instructions until cooked.
- Drain, then rinse in cold water. Drain again and put into a large bowl.
- Add all remaining ingredients and gently combine. Season to taste, then serve.
