Cranberry nut bread


  1. Preheat oven to 180°C, fan oven 160°C, Gas Mark 4, 350ºF.  Grease a 900g / 2lb (23 x 13 cm /9 x 5-inch) loaf pan.
  2. Mix together flour, sugar, baking powder, salt and bicarbonate of soda in a medium mixing bowl.
  3. Stir in orange juice, orange zest, butter and egg.
  4. Mix until well blended. S
  5. tir in dried cranberries and nuts.
  6. Spread evenly in loaf pan.
  7. Bake for 55 minutes or until a toothpick inserted in the centre comes out clean.
  8. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight.
