Classically Sweet Oat Bars

Method

  1. Preheat oven to 180C/350F/Gas mark 4. Line 8in (20cm) square tin with parchment paper.
  2. In a medium bowl, combine oats, nuts, sultanas, raisins, salt and seeds. Add milk and let stand to soak for 10 mins or so. 
  3. Stir well. Pour mixture into prepared tin and spread evenly. Bake for 30-35 mins.
  4. Let cool on wire rack. Cut into bars/squares. Store in airtight container. Keeps well in the fridge for 3 days.

Ingredients

250g (9oz) semi-skimmed milk
135g (5oz) porridge oats
40g (1½oz) almonds, with skin, roughly chopped
2 tbsp milled linseed
1 tbsp raisins
1 tbsp sultanas
1 tbsp cumin seeds, whole or ground
Pinch of sea salt
