Almond and pecan biscuits


  1. Preheat the oven to 180°C/350°F/Gas Mark 4. Line two baking trays with parchment.
  2. Cream the butter and sugar together, then beat in the rest of the ingredients. Divide into 12 balls, place on the baking trays and flatten slightly.
  3. Bake for 15 mins, or until starting to look golden. Remove from the oven and allow to cool for a few minutes, then transfer to a wire rack to cool completely.

100g golden caster sugar
100g Waitrose gram flour
100g pack ground almonds
60g pecans, roughly chopped
2 tsp vanilla extract
½ tsp ground ginger
