Sweet and sour pistachio meatballs

Method

  1. Combine turkey, breadcrumbs, pistachios, onion, egg and salt.  With wet hands shape the mixture into balls about the size of a walnut.
  2. Place in shallow pan and bake at 200°C/ 400° F /Gas Mark 6 for 20 mins or until cooked through.
  3. To make the sweet and sour sauce combine all the ingredients in a pan, bring to the boil then simmer for 5 mins. 
  4. Thread the meatballs onto wooden skewers. Garnish with pistachios and serve with the sauce.

Ingredients

500g (1lb 2oz) turkey mince
60g (2 1/2 oz) dry bread crumbs
60g (2 1/2 oz) shelled pistachios, chopped
1 small onion, peeled and finely chopped
1 medium egg, beaten
Pinch salt and ground black pepper to serve
For the sweet and Sour Sauce:
50g (2oz) brown sugar
50g (2oz) malt vinegar
1 small can pineapple in juice, roughly chopped
150g (5oz) tomato ketchup
1tbsp soya sauce
To serve:
Shelled pistachios, roughly chopped
