Burnt quark prune pots

Method

  1. Snip each pitted prune in half, place in a small bowl and cover with Armagnac. Leave to soak for at least 1 hour or longer if time allows.
  2. Divide the soaked prunes between two ramekins and pour over any remaining juice
  3. Crumble an Amaretti biscuit over each pot of prunes then spoon half the quark into each ramekin
  4. Sprinkle a teaspoon of Demerara sugar onto the top of each pot then bru?le?e under the grill for 2-3 mins or with a blowtorch, then serve

2 Amaretti biscuits
2 tsp demerara sugar
250g Quark
