Blue cheese and almond sauce on Tenderstem broccoli and sirloin steak

Method

  1. Put on a pan of water or steamer for the broccoli
  2. Toast the almonds in a small frying pan slowly swirling them now and then over a medium heat until deep golden (they should be dry fried with no oil). Put to one side
  3. Pour the cream into a small saucepan and crumble in the stilton
  4. Stir over a low heat until melted. Grate in the raw garlic and put to one side. Season with a little salt but more pepper
  5. Cook the broccoli and then drain thoroughly
  6. Cook the steak to your liking
  7. Lay the steak and broccoli on 2 plates and spoon over the warm sauce. Scatter with the almonds

1 ½ tbsp flaked almonds
50g Tuxford and Tebbutt Blue Stilton
100ml double cream
1 clove of garlic, finely grated
a little salt and a big grind of black pepper
12 tenderstem broccoli spears
