Method

  1. In a food processor blend the oats until the consistency of flour. Add in the rest of the ingredients and blend until fully combined.
  2. Roll the mixture into 16 balls and roll each ball in desiccated coconut until fully coated.
  3. Place in the freezer for half an hour then then place in the fridge until serving.
  4. These will last 2 weeks in the fridge.

Tip

175g/6oz ordinary dried dates could be used instead of medjool dates along with a splash of water

50g of Blackberries
10 Medjool dates
50g of desiccated coconut plus extra for rolling
200g of porridge oats
1 vanilla bean scraped
1 tsp of cinnamon
