Sticky chocolate pudding

Chocolate pudding is one of the few guilty pleasures few can resist surrendering to. But with the delectable creation from Rosemary Conley's Slim to Win cookbook you can treat your tastebuds and your waist-line at the same time

INGREDIENTS

For the pudding
100g dark brown sugar
100g Extra Light margarine
2 eggs
25g cocoa
75g plain flour
1 tsp baking powder

FOR THE TOPPING
2 tsps cocoa powder
2 tsps brown sugar
2 tsps boiling water

METHOD

  1. Preheat the oven to 150C, 300F, Gas Mark 2. Lightly grease a loaf mould. 
  2. Mix together all the pudding ingredients, using an electric whisk.
  3. Pour the mixture into the prepared loaf mould. Bake in the centre of the oven for 30 minutes until firm to the touch. Remove.
  4. Mix together the topping ingredients and pour over the pudding. Return to the oven for 5 minutes.
  5. Serve warm with virtually fat free fromage frais and, if you wish, blueberries.
