Cooking with grandchildren: Jam tart

Jam tarts. Next time you are entertaining the grandchildren remember this quick, easy and fun recipe. The humble tart is a timeless classic as popular with grown-up  as it is little ones.  

Serves 6-8

You will need:
A 20cm (8in) fluted flan tin
A small cutter, any shape

1 Preheat the oven to 200ºC/400ºF/Gas Mark 6. Take a 350g (12 oz) packet of shortcrust pastry out of the fridge for 10 minutes before cutting off a quarter and wrapping this in clingfilm.

2 Sprinkle a little flour onto a clean surface and a rolling pin. Roll out the bigger piece of pastry until you make a 30cm (12in) circle.

3 Lay the rolling pin on one side of the pastry and roll it around it. Gently lift it up and lay on the tin, then unroll the pastry. Dip a finger in some flour and gently press the pastry into the edges of the tin, making sure you don’t rip it. Then trim off any excess pastry.

4 Spoon in 6 rounded tablespoons of seedless raspberry or strawberry jam and spread it evenly with the back of a spoon.

5 Roll out the other piece of pastry to 5mm (1/4 in) thickness. Using the cutter, cut out 12 pastry shapes and brush them with a little milk. Then lay on top of the jam.

6 Bake for 20 minutes, or until the pastry shapes have turned golden brown on top. Then using oven gloves, take it out of the oven and leave to cool. Cut into wedges and serve with a dollop of ice-cream.

You can make individual jam tarts by using smaller flan cases or try other flavours with blueberry and cherry jams.
