Chicken ratatouille bake
Try this tasty tray bake for a healthy, high protein dinner
- 390g (14oz) can essential Waitrose Ratatouille Provencale
- ½ x 25g (1oz) pack Waitrose Cooks’ Ingredients Basil, chopped
- 2 essential Waitrose British Chicken Breast Fillets, halved
- ½ x 150g (5oz) pot essential Waitrose Italian Mozzarella Cherries, drained
- Time: 5 mins
- Serves: 2
PER SERVING: 312 cals 8.6g sugars 12.8g fat (sat fat 5.9g)
- Preheat the oven to 200°C, gas mark 6.
- Place the ratatouille in an ovenproof serving dish, stir in half the basil and place the chicken pieces on top.
- Scatter over the mozzarella cherries and remaining basil, season and bake for 30 minutes until golden.
